Mocha Log Cookies For Coffee Lovers
When growing up, Mom would not drink coffee, but she loved these Mocha Log cookies. The buttery cookie, dipped in chocolate and nuts, melted in our mouths. We spent many afternoons together rolling out the dough, dipping the baked cookies in chocolate sauce, and grinding walnuts for the top. This was our cookie and our special time together. The recipe comes from Better Homes and Garden Homemade Cookies Cook Book, which mom received free, years ago from the local savings and loan.
Mocha Logs
1 cup butter
3/4 c sugar
1 egg
1 t vanilla
2 1/4 c flour
2 T instant coffee crystals
1/4 t baking powder
1/2 t salt
semisweet chocolate, melted
finely chopped walnuts
Cream butter and sugar; beat in egg and vanilla. Stir flour, coffee crystals, baking powder, and salt into creamed mixture. Hand roll into 2 inch to 3 inch logs. Place on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Cool. Dip both ends of each cookie into melted chocolate, then coat with nuts. Enjoy every bite.
